Spicy Malay Chicken


Tip: Take the chicken out of the freezer in the morning so it is defrosted by the time you get home.


  • ¼ cup fat free plain yoghurt
  • ¼ cup reduced oil mayonnaise
  • 3 Tablespoons finely chopped onion
  • 1 tsp ginger
  • 1 tsp curry powder of your choice
  • 220g boneless chicken breast with skin removed (whole or cut into strips)
  • 1 tsp paprika
  • ¼ tsp ground black pepper
  • Coriander (optional)


  1. In a small bowl mix together the yoghurt, mayonnaise, onion, ginger and curry powder. Set aside
  2. Cook the chicken in a frying pan for 4 -5 minutes over medium heat
  3. Stir in the yoghurt mixture
  4. Cook, stirring for two minutes or until chicken is cooked
  5. Serve with Basmati rice and garnish with Coriander
