• 1 cup  oats
  • 1 cup buttermilk
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup brown sugar
  • 1 medium egg (beaten)
  • 1/4 cup margarine (melted)
  • 1 cup of blueberries


  1. Preheat oven to 190 deg Celsius
  2. Combine the oats and buttermilk. Once mixed allow to stand
  3. In a mixing bowl combine flour, baking powder, baking soda, salt and sugar. Stir well to blend
  4. Add the beaten egg and melted margarine to the oat mixture. Mix thoroughly
  5. Add the oat mixture to the dry mixture, just until moistened
  6. Gently fold in the blueberries
  7. Fill 10 – 12 muffin cups and bake for 20 – 25 min or until the top springs back when lightly touched


Whole wheat flour for all purpose white flour

1/2 cup oat bran for 1/2 cup oats

Substitute blueberries for chocolate chips or raisins
