• 140 grams semi sweet or bitter sweet chocolate
  • 1/2 cup /1 stick unsalted butter (cut into small pieces)
  • 2 tblsp cocoa powder
  • 1 cup white sugar
  • 1 tsp vanilla essence
  • 3 large eggs
  • 3/4 cup all purpose flour
  • 1/4 tsp salt
  • 3/4 cup semi sweet chocolate chips (optional)


  1. Preheat oven to 180 deg Celsius
  2. Grease and 8 inch baking tin
  3. Place a large steel bowl over a saucepan of simmering water
  4. Melt the chocolate and butter in the steel bowl (make sure no moisture gets into the bowl)
  5. Remove the bowl from heat and stir in the cocoa and sugar
  6. Whisk in the vanilla essence and eggs (one at a time). Beat well after each addition
  7. Stir in the flour, salt and chocolate chips. Make sure the mixture is well combined
  8. Pour the mixture into the baking tin and bake for 30 minutes or until toothpick comes out clean
  9. Cool on a baking rack and enjoy

These brownies freeze well
