Watermelon, Rocket and Feta Salad with Yoghurt Dressing

I have made this salad countless times and it is always a hit with my family and friends. It is so easy to make, perfect for those summer afternoon braais/barbecues.

The secret to this salad is the dressing! I can make it with my eyes closed but when my friends try and make it they say it just doesn’t taste as good as mine. The key is taste testing, you need to add a little bit of this and that here and there till it comes out just right. I have tried my best to measure out the ingredients for you so that the end result is an amazing yoghurt dressing that just adds that special something to this salad.


Salad:

  • 1 packet of  Woolworths ready cut watermelon / half a quarter watermelon cut into bite size pieces
  • 1 packet Woolworths rocket (arugula) / 3 cups rocket
  • 1 and a half rounds of feta cheese cut into bite size pieces
  • 1/2 large avocado sliced
  • Fresh mint leaves (handful)

Dressing:

  • 1/4 cup plain fat free yoghurt
  • 2 tbsp honey
  • 3 tbsp fresh lemon juice
  • 1 tsp olive oil
  • 1 tbsp fennel leaves finely chopped
  • Black pepper

Method

  1. Toss the salad ingredients in a bowl and set aside
  2. Combine the yoghurt, honey, lemon juice and olive oil and mix well
  3. Add the chopped fennel and finish off with some cracked black pepper
  4. Pour dressing over the salad ingredients just before you serve or serve on the side
  • If the dressing is too thick add some cold water until it thins out
